Suara Merdeka. Hampir semua wisatawan yang berkunjung ke Kabupaten Rembang, Jawa Tengah, memilih sirup kawis sebagai oleh-oleh Lebaran.
“Kami belum pernah melewatkan sirup kawis sebagai oleh-oleh Lebaran saat pulang kembali ke Jakarta. Sebab, sirup kawista hampir tidak bisa dijumpai di daerah lain,” kata Sumaryono, salah satu warga Jakarta asal Rembang, saat ditemui di Gerai penjualan Sirup Kawis, Toko Dewa Burung, di Rembang, Senin (13/9).
Selain itu, sirup kawis juga disebut sebagai salah satu `trade mark` Rembang yang juga terkenal dengan sebutan kota garam. “The Java Cola atau cola dari Jawa, menurut saya juga merupakan julukan yang pas untuk sirup kawis,” kata Henky Condro, salah satu warga Jakarta asal Rembang yang lain.
Menurut dia, salah satu alasan digemarinya sirup kawis adalah rasanya yang `sepet`, manis, dan cukup menyegarkan.
Sirup kawis terbuat dari sari buah kawis yang merupakan kategori jeruk-jerukan. Ukuran buahnya sedikit lebih besar dari jeruk kebanyakan. Bentuknya berkerut dengan warna kulit buah coklat keabu-abuan dan isinya berbulir warna hitam kecoklatan, tetapi tidak bersekat seperti jeruk. Buah yang memiliki nama latin `limonia acidissima synferonia` ini, juga memiliki aroma khas dan memang cukup banyak dijumpai di kabupaten ini.
“Kami hanya bisa memperoleh buah kawis sebagai bahan baku pembuatan sirup dari Rembang dan sebagian kecil wilayah di Kabupaten Pati karenakawis biasa tumbuh di wilayah dengan tanah berkapur,” kata Pudjiono Hariono, pengusaha dan pemilik Toko `sirup kawis` Dewa Burung.
Menurut dia, selain sirup, limun kawis juga sangat diminati para wisatawan. “Penjualan sirup kawis pada saat Lebaran cukup ramai, sehingga transaksi meningkat dua kali lipat. Namun, bukan berarti penjualan pada hari-hari biasa sepi, karena merupakan oleh-oleh khas, penjualan tetap cenderung ramai setiap harinya,” kata Pudjiono, didampingi Nani Novianti, istrinya.
Dia menyebutkan, sejak diproduksi generasi pertama atau pada masa pengelolaan kakeknya, Njoo Thiam Kiem sekitar tahun 1900-an, sirup kawis kerap menjadi pilihan oleh-oleh kebanyakan wisatawan yang berkunjung di Rembang. Sirup kawis khas Rembang, kata dia, bahkan sudah beredar di kalangan warga negara Indonesia di Finlandia dan Amerika.
“Kami belum melayani ekspor karena permintaan dalam negeri sudah cukup tinggi. Namun, relasi kami yang sedang studi dan bekerja di dua negara itu sering membawa sirup kawis sebagai oleh-oleh, sehingga sirup kawis dikenal di sana,” katanya.
Harga sirup kawis juga beragam, tergantung ukuran dan kemasannya. Sirup kawis kemasan botol kaca dengan ukuran 620 ml dijual Rp17.500, kemasan dua liter Rp54.000, dan kemasan lima liter Rp113.000.
